Walla Walla Sweet Onion Caesar Salad

Walla Walla Sweet Onion Caesar Salad

Ingredients

  • 3 – Walla Walla Sweet onions
  • 1/4 cup parmesan cheese
  • Optional Salute Santé! Grapeseed Oil Caesar Dressing (recipe below) OR- 1/3 cup of your favorite Caesar Salad dressing.
  • ½ qt. buttermilk
  • 3 ounces Ducktrap Smoked Trout
  • ½ cup garlic seasoned croutons
  • 3 – Small roma tomatoes
  • 3 – Romaine lettuce leaves
  • Pepper
  • Recommended Dressing (optional)
  • 1/3 cup Salute Santé Grapeseed Oil
  • 2 dashes worcestershire sauce
  • 2 dashes soy sauce
  • 1 clove garlic - chopped
  • Juice of 1/2 lemon

Directions

  1. Dressing process: Combine all ingredients and set aside.

  2. Salad Process: Quarter and slice onions very thin. Place into bowl and cover with buttermilk. Refrigerate for at least 2 hours. Drain buttermilk. Combine sliced onions with dressing, parmesan, croutons, and a dash of pepper. Let stand.

  3. Slice roma tomatoes in half, the long way and scoop out all seeds and pulp. Season the tomato cup with a dash of pepper. Let stand

  4. Juliann slice the romaine leaves about 2 ½ - 3 inches long.

  5. Portion the anchovies, one piece per serving. To start, try about ¼ of a whole fish.

  6. Lay 4 or 5 romaine strips into tomato cup. Place a small scoop of onion salad into cup over romaine strips, arrange one crouton top and centered. Finally lay a 1/2 ounce piece of Ducktrap Smoked Trout over the crouton.
